Street Fighter IV is the only fighting game I can think of right now that’s really popular. The next Tekken is coming out soon, so that might become as popular.
In terms of shooters, there’s Halo 3 and the Call of Duty series.

It depends on your system and your fighting game preference. If you have any of the Next Gen consoles and the internet, your options are quite numerous. Some might not be out yet but they are on the way.
Off the top of my head:
Street Fighter IV (great online and offline, if you love the old games you’ll love this.)
Street Fighter HD remix (DLC for your ps3 and xbox only.)
Marvel vs Capcom 2 remix (same as above, not out yet)
Soul Caliber IV (Very fun, great for the character creator alone.)
Capcom/Tatsunoko (I can’t remember the full title, not out yet.)
And I think there are a few more that are on the way, some downloadable remixes, others new fighters.

If you only have your ps2, then there are the Mortal Kombat games, a few of the old arcade fighters (Street Fighter collection, anthology) and Guilty Gear which I highly recomend. And then there’s a game that if you can get it, you DEFINATELY should: Capcom vs SNK 2. Some people feel it’s the pinacle of 2D fighting games.
